JAIME PESAQUE
FOUNDER OF JAIME PESAQUE RESTAURANTS.
Cordon Bleu graduate with a Master's Degree in Cuisine from the Italian Culinary Institute (ICIF).
Born and raised in Peru, trained in Europe and apprenticed at Michelin-starred restaurants in Italy and Spain, including El Celler de Can Roca.
Back in Peru, he perfected his own style at Al Grano, where he directed his first kitchen. In 2008, with an entrepreneurial spirit and culinary artistry, Pesaque decided to open his flagship restaurant, Mayta, a contemporary Peruvian cuisine restaurant and pisco bar in Lima, Peru, where he always strives for traceability of local products, combining contemporary culinary techniques with local products to create sophisticated and modern dishes. Likewise, Pesaque manages to export Peruvian cuisine abroad to countries such as the United States, Italy and Holland. In 2019, Mayta entered the list of Latin America's 50 Best Restaurants, and in 2020 it was awarded the Highest Climber Award.
MAYTA was born to give an ode to our land, it is the flagship restaurant of Pesaque and is a personal contemporary expression of Peruvian gastronomy based on flavors and preparations of memory and history but brought to modernity.

500 GRADOS is a kitchen-workshop where a warm and attentive service is combined with a casual and modern atmosphere. The protagonists are Celsius and Fahrenheit, two wood-fired ovens where food meets fire, resulting in dishes with unique flavors.
Mad Burger, an American burger joint in Lima, has quickly stood out among the best burger joints. After its first anniversary, it received the Luces Award for Best Dark Kitchen Proposal. Its menu includes artisanal burgers and hot dogs, fries, shakes and desserts such as chocolate cookies.
